Mohammad Shia al-Sudani announced on Sunday that the foreign-backed terrorist had also buried alive some of their victims, including women and children.
He further added that nearly 300 women from the ethnic community were kidnapped as slave.
"We have striking evidence obtained from Yazidis fleeing Sinjar and some who escaped death, and also crime scene images that show indisputably that the gangs of the Islamic States (ISIL) have executed at least 500 Yazidis after seizing Sinjar," Sudani said in a telephone interview.
Sinjar is the ancient home of the Yazidis, one of the towns captured by the notorious ISIL terror elements who view the community as "devil worshipers" and demand they either convert to Islam or face execution.
A deadline passed at midday Sunday for 300 Yazidi families to meet their oppressive demand. It was not immediately clear whether the Iraqi minister was talking about the fate of those families or others in the conflict.
"Some of the victims, including women and children were buried alive in scattered mass graves in and around Sinjar," Sudani said.
"In some of the images we have obtained there are lines of dead Yazidis who have been shot in the head while the Islamic State fighters cheer and wave their weapons over the corpses," said Sudani.
"This is a vicious atrocity," the Iraqi official emphasized.

The atrocities committed by the Takfiri terrorists have forced tens of thousands of Yazidis and Christians to flee for their lives during their push to within a 30-minute drive of the Kurdish regional capital Irbil.
Earlier in their push through northern Iraq, ISIL terrorists, who also consider all Shia followers of Islam as “heretics who must repent or die,” boasted about killing hundreds of captive Shia soldiers after capturing the city of Tikrit on June 12. They then posted the video footage of their shooting of the Shia captives on the Internet.
The Yazidis, followers of an ancient religion derived from Zoroastrianism, are spread over northern Iraq and are part of the country's Kurdish minority.
Sudani went on to alarm the international community that the atrocities committed by ISIL terrorists “will not stop in Iraq and could be repeated somewhere else if no urgent measures were taken to neutralize this terrorist group."
"It's now the responsibility of the international community to take a firm stand” against the Takfiri terrorists and “reach a consensus” on waging a war on the foreign-sponsored terror element in a bid to halt their “atrocities against civilians," added the Iraqi official.
Top Iraqi authorities have repeatedly accused Saudi Arabia and Qatar of sponsoring and funding ISIL terrorists across Iraq and have lately vowed to launch a legal case against state sponsors of the terror group in international courts.
